During the winter period, many of us suffer from colds, flu and feeling blue but as the weather gets warmer and the evenings get lighter we approach the new season with a smile! Health and happiness go hand in hand and eating right is one way to support this.

Recently we’ve been working with health and fitness guru @wolfpackfitness13. Francesca provides her online followers with nutrition via her tailored nutritional plans. She’s been creating some tasty, antioxidant-rich dishes using Roots Collective Blends, packed with nutrition and goodness leading to a happier and healthier you.

The first recipe from Francesca includes our Asian Sling Blend which packs a punch, boasting nutritious flavoursome ingredients including sunshine yellow peppers, vitamin-rich carrot, spinach, fragrant lemongrass and coriander. It contains Honey, coconut milk and avocado which are offset by a kick of red chilli and lime zest. A perfect combination of veggies, perfect for spicy oriental dishes!

Prawn and Coconut Thai Sling

 

(Serves 1 – 2)

 

Ingredients:

1kcal Coconut Spray

½ Pack Coconut Rice

1 Bottle of Roots Collective Asian Sling Blend

100g Prawns

50g Light Coconut Milk

(Feel free to add any extra vegetables or other ingredients of your choice!)

 

 

Instructions:

  1. Fry off your prawns in a pan, using your 1kcal Coconut Spray
  2. Prepare your rice (instructions will depend on the rice you’ve decided on)
  3. Once your Prawns are cooked thoroughly, stir in your Coconut Milk and 1 Bottle of Roots Collective Asian Sling Blend
  4. Stir until everything is hot
  5. Serve up your dish with your rice
  6. Enjoy!

 

 

Next up, we have a heart-warming breakfast including our creamy Carrot Zing Blend packed with Carrots, root ginger, coconut milk, lime juice and a dash of honey which when combined together provide the ultimate Vitamin C boost. Francesca has created some extremely appetising (and very trendy!) Carrot Cake Oats:

 

Carrot Zing Overnight Oats -

 

(Serves 1 – 2)

 

Ingredients:

1 Bottle of Roots Collective Carrot Zing Blend

100ml Unsweetened Almond Milk

½ Teaspoon Baking Powder

100g Porridge

Cinnamon

20g Honey

1 Carrot

1 Egg

 

Instructions:

  1. Firstly, mix your Oats, Carrot Zing Blend, Almond Milk, Baking Powder and Egg together in an oven proof dish
  2. Then, Grate your carrot and mix that in as well
  3. Add Honey and Cinnamon
  4. Place in the oven for 20-25 minutes on a medium heat
  5. Serve and Enjoy

 

 

Garden Greens Porridge -

 

Last but not least, Francesca has used the yummy Garden Greens Blend as the perfect accessory to her morning porridge, bursting with nutrients and vitamins to kick start her day! This recipe is easy pea-sy to put together, why not get creative and throw in some of your favourite fruit or veg for added goodness? Francesca has opted for some colourful chopped courgette!
