Fruit and Nut Quinoa Noodles
Quinoa – it's been tipped as 'natures latest superfood' – seems to be in the press as much as Blends at the moment. We thought it would be a great ideas to combine the two to make these delicious Fruit and Nut Quinoa Noodles.

Time to cook: 5 mins
Carrot Zing (1/2 bottle)
Extra virgin olive oil (15 ml)
Fresh carrots (2 medium sized: peeled and grated, or spiralized)
Quinoa (80g – cooked following the pack instructions or use precooked)
Ready to eat dried apricots (50g quartered)
Fresh coriander-chopped (2 tabelspoons)
Toasted flaked almonds (1 tabelspoons)
Prepare the quinoa following the pack instructions.
Mix the Carrot Zing and olive oil in a large bowl.
Add the prepared carrot. Quinoa, dried apricots sultanas, coriander and flaked almonds.
Mix well and serve.
Serve with grilled halloumi cheese or chicken.
