With the warmer months now approaching fast, we all want a meal that’s quick, summery and bursting with vibrancy.
Our Beetroot & Feta Salad is a classic combination of flavours. Sweet beets, fragrant rocket and creamy cubes of Greek Feta combine to create a mouth-watering, seasonal dish.
But it’s our Sweet Beets Blend that really steals the show in this recipe. Boasting 84% pure veggie content, you’ll beet’ any blues with our delicious, earthy mixture of red pepper, iron-rich beetroot, root ginger, avocado, honey, refreshing cucumber and lime. What’s more, beetroot is the perfect aid for pre-workout preparation, as it helps to stimulate inorganic nitrates and blood flow, boosting exercise performance. Sweet Beets (1/2 bottle)
Prepared salad leaves: Spinach, Watercress and Rocket (100g)
Ready cooked beetroot (250g Quartered)
Spring onions (2 stalks thinly sliced)
Lemon (grated zest and 1 teaspoon juice)
Feta cheese (100g cubed)
Pumpkin seeds (25g)
Pour the Sweet Beets into a large mixing bowl, add the lemon juice and zest , mix with a fork.
Add the salad leaves, beetroot pieces and spring onion. Toss gently and divide between 2 large serving dishes.
Sprinkle over the feta cheese and pumpkin seeds
Serve straight away.
